So I´m a big fan of Wild Defiance but mostly because if the opponent tries to Lightning Bolt one of my creatures, it might actually survive.
My problem with Wild Defiance is that I don´t want to build a deck full of easy mindless Larger Than Life and Artful Dodge but rather want to build a deck that´s a bit more fun and creative. Prey Upon for instance seems like a fun way of dealing with big creatures together with Wild Defiance
With Valor Made Real one of my creatures get´s +3+3 from Wild Defiance while being able to block additional creatures which also seems fun
Does anyone know of any quirky instants and soceries that could go well into a casual Wild Defiance deck?
There are quite a number of instants/sorceries that let a creature of yours fight or simply deal damage to a creature equal to its power. Examples are Fall of the Hammer, Pit Fight, Rabid Bite, Nature's Way, Time to Feed, etc. With Soul's Fire you can even deal damage to the opponent. Nissa's Judgment in conjunction with a single WD could make two measly 1/1s deal a total of 10 damage to a creature.
With Setessan Tactics, you can target many creatures at once, and then tap them to fight individually with their +4/+4 boost.
Soul's Majesty also benefits greatly from the +3/+3, letting you draw quite the number of cards.
Cauldron Haze lets you target as many creatures as you want to give them all the +3/+3 and make them return should they die. Great Overrun effect, if you want one.

I have also been thinking about using cards like Valor Made Real because it will give my creature +3+3 from Wild Defiance and then be able to block more than 1 creature, which seems useful
This may be the most competitive thing you can do with this card. Honestly, I did try this out and was pretty underwhelmed most games. I don't know how he put up those numbers he talks about in the article, tbh, but I'd wager it's probably because he's a Pro Player and I am not.
I did have plenty of fun with it in standard with that infect deck, that is the most compedative way to use it, you can use a deck similar to it in modern (without probe and zenith which are banned)
Now for fun, I think the card you are looking for is Battlefield Thaumaturge, combine it with X spells, tokens and pump effects and go wild... :P.
I also like to combine it with Seeds of Strength. Since it targets three times, that's +12/+12 until end of turn for GW
There's also a 3 mana GW spell with Ajani in the art that does this 2 times but adds a +1/+1 counter instead. A little less powerfull, but still +8/+8 for GW of which +2/+2 is permanent. i just can't remember the name.

Unfortunately, it doesn't work this way. Seeds of Strength and other spells that can target the same creature more than once, will still trigger Wild Defiance only once per creature. There is even a gatherer ruling on WD specifically adressing this:
5/1/2012 If an instant or sorcery spell targets the same creature you control more than once, Wild Defiance will trigger only once.
Tainted Strike could be fun on trampling creatures. A deck using that approach would likely contain giant growthy cards as well as leading you down the classic infect path but it looks fun nonetheless. Not entirely original but I bet you could slaughter some folks with that combination. Make sure you include Blossoming Defense so they don't foil your plans with spot removal.
