Limited is the catch-all for both Draft and Sealed.
Draft is when you're huddled around a table with seven other dudes, and you crack a pack, pick a card, and pass the rest to the smelly dude beside you, and the heavy breathing guy on the other side of you passes his cards to you.
Sealed is when you get six packs, crack those, and build your deck from that card pool.

thanks for the reply I avoid the smelly drafts and stick to mostly magic online or small modern events, as such ive just never had the experience. so which format is faster?
In Draft you get more focused decks (at least if you know what you are doing), because you actually pick cards from 8x3=24 boosters rather than having to build from only 6. Sure, you really only get two cards out of each of those 24 boosters, but most of those cards are actually useful for you. So while you end up with only half as many cards as in Sealed, you overall still get more useful stuff to build with. In Draft, you can get a real aggro deck, or a real control deck, or maybe even something resembling a combo deck. Whereas in Sealed, you are pretty much locked into Midrange.
Draft will result in faster games, but takes longer for the pregame procedures. The drafting process takes a while, especially if there is no time limit for picking your next card (but the organizer or judge or someone else will eventually force you to choose a card). Deckbuilding time is usually a bit less than in Sealed.
How fast Limited is, depends on the set or block. Some sets/blocks are geared towards aggressive play, so Limited games with those will be faster in general. Other sets/blocks take it slow, so control decks have a better stand, and the games go longer.
Also, pre-release sealed is different than a normal sealed run since the pre-release kits are seeded. Regular sealed you usually end up with a more randomized card pool thanks to the packs being drawn randomly from a booster box. You also don't get the promo card to help with the deck building.

Limited just means that your decks are built from a pool of randomized cards, usually from booster packs. Draft is probably the most balanced form of limited. The most powerful form of limited is Cube, where a box of cards has been selected to create an ideal drafting environment. There are also loads of different variations on draft, such as the grid draft, which is a two-person variation. Traditional drafting is a lousy format with two people.
I recommend going to a booster draft some time just to see what it's like. The cost of entry is usually about the cost of the packs, and it's loads of fun. I'm much less interested in sealed: it's way more random, and you never end up with the deck you wanted. It is a much faster way to get decks built, however.
