I haven't played magic for a while and I'm trying to construct a well-rounded deck, but I notice that I don't have anything that can act as a Fog to deal with cards like Etched Champion. What are some reliable ways for bant colors to deal with that?
The easiest way in Modern is to find cards that destroy all artifacts, like Creeping Corrosion. For Modern, I'm assuming you are referring to Affinity, and in which case you can shut down most of the deck with Stony Silence, which allows you to race them easily due to all of their creatures being pretty terrible (Arcbound Ravage is a two mana 1/1, etc.). Legacy is not my area of expertise, but I'm sure someone else knows what you can do there.

If protection from your colorls is your main problem, you could try devoid or other colorless cards. For example, Eldrazi Displacer can blink Etched Champion to remove it from combat despite protection due to being colorless, same goes for a Knight of the Reliquary or any creature that gains protection from Mother of Runes. Similarly, Blinding Drone can tap those creatures before they get to attack, as can Blinding Souleater. Tapping potential attackers down with artifacts is also an option, like the classic Icy Manipulator or Trip Noose (EDIT: almost forgot, that there is now a better version of the latter: Pacification Array!). Brittle Effigy can exile a protected creature.
Now that's a harsh judgment, and inappropriate. After all, if your deck cannot handle what the opponent throws your way, it isn't that good in the first place. If adding some individually weaker cards (to the sideboard or main) makes the deck stronger overall by providing the answers you need, then the deck is better with then without. Many answer cards are very strong when they face their respective problems, but downright useless if those don't show up. You don't need the universal strongest answer to all problems (it doesn't exist anyway), just a strong answer for the sideboard or as a tweak for the main if the problem pops up frequently.
A good deck is determined by how often it can win in its meta, not by the individual power of the cards it uses. Good decks use good cards, sure, but they also use the cards they need, even if those aren't the best when examined by themselves.

What deck are you even playing? It's hard to recommend cards if you just say you're playing Bant. There's no such thing as a catch-all perfect solution that will make your deck a good matchup against everything you don't expect. Rezzahan might not have named many cards currently used in tier 1 decks, but cards like Engineered Explosives, Pithing Needle, and Grafdigger's Cage could all go on that list. I mean it doesn't really matter what bant deck it is, none or very few of the suggestions so far are ever even considered for pro decks. The only notable one is Pithing Needle which does nothing to stop "protection from all colors" or any passive protection effect.
