So lets say you are at FNM and you or your opponent plays a card that requires one or the other to flip a coin. If neither player has a coin of any kind what would you consider an acceptable alternative?

If you have a die that has an even number of facets you can choose even/odd and roll that.

You specifically should not do this, as is it too open to problems/accusations of cheating/not random chance. Just roll a die and say "evens is winning the flip, odds is losing the flip."
Die roll is the obvious answer. The important part isnt the physical coin, you can simulate it with anything random that has a 50/50 chance.
Rock Paper Scissors is not truly random, its a game that can be played by exploiting non-random behavior in opponents.
If you're talking about non random, then you shouldn't roll a dice unless it's a casino dice which is actually made to be random, most dice have defects due to mass production meaning they roll a number more often than others.

An average die isnt perfectly random, but its sufficiently random. A coin you pull out of your pocket isnt going to be perfectly random either.
Rock Paper Scissors is entirely non-random. It appears random, but is dependent on player choice, which is non-random.

This is a common misconception about random, at least in relation to games and similar situations. Even if the die isn't perfectly random, as long as whoever's assigning the even numbers to heads or tails thinks it's random and is just choosing heads or tails on a whim (as in, heads isn't always even - they just wing it each time), it serves exactly the same purpose. A die could be weighted to always land on an even and it wouldn't actually matter in a small number of rolls (if you rolled it too many times, obviously you'd at least subconsciously start to doubt it's randomness and go with even).
Anyway, they're more than sufficiently random. The odds of the imperfection causing the outcome to change are basically irrelevant (you know, like if it were actually 50.01% chance of heads, it's only going to give you the "wrong" outcome 1 in every 10,000 rolls).
