Huntmaster of the Feels looks and feels like a legendary card, but actually making it a legend would have been problematic because the names on the two sides are different - you could have two down provided they weren't the same way up.
That is not now, nor was it ever a good reason for him to not be legendary. Wizards could have simply rewritten the legendary rule to account for double-faced cards, had both names on the card be the same, or had a clause written on him addressing it.
I know that, I was just confused that it was mentioned that he should be Legendary...as in either Timothy, Mimeslayer simply didn't know he was Legendary, or that someone mentioned he shouldn't be and Timothy, Mimeslayer was saying he absolutely should be Legendary.
The spirit avatars from Shadowmoor block sure feel legendary too (Overbeing of Myth, etc.), but then Demigod of Revenge would be pretty awkward!
I'm sure there are plenty others I missed, especially with lands that skirt the edge of Legendary (Innistrad's Kessig, Wolf's Run, and Ravnica's Vitu Ghazi, the City Tree cycles are particularly suspect).
I feel like the artifact lands should be legendary too. It also would have made affinity less overpowered.
Sovereigns of Lost Alara - That place must have been overruning with sovereigns. Homer (as voiced by Leonard Nimoy) would be rolling in his grave.
Laquatus's Champion - How many champions does the old goat have? At once, I mean.
Colossus of Sardia - So much like the Colossus of Rhodes, you sort of think there should only be one. At least only one from Sardia.
Bloodline Keeper - I mean, I suppose there could be a keeper for this bloodline, and a keeper for that bloodline, a Lord for that lineage, and a Lord for this lineage. But really...
Island Fish Jasconius - Because the existence of two things with the brilliant, unalloyed, hair-on-fire-screaming-in-Ancient-Greek-while-shooting-lasers-from-your-eyes AWESOMENESS of an Island Fish would rend space-time and destroy everything except those Island Fish.

If I recall the story correctly, Laquatus's Champion WAS a singleton. His name was Burke, and Chainer created him as a Dimentia Beast for Laquatus. (I think he also killed Balthor.) So definitely him.
How about the other way around? That is, legends that do not feel all that legendary?
My vote is on Isamaru, Hound of Konda. It's a vanilla 2/2 white creature. The only special thing about it is its unusually low CMC, but does that make it legendary?
Isamaru is legendary because he is the hound of Konda, who plays an important part in the story of kamigawa

The reason the valakut cycle wasn't legendary, according to Maro if I recall correctly was that R&D didn't like making legendary lands under that version of the legend rule, in which if two players had a copy of a legendary permanent they both entered the graveyard, which means that with lands, if your opponent had a legendary land, you suddenly had a mandatory strip mine if you played the same land, which R&D didn't really want. If the legend rule was different at the time they probably would have been legendary.
