Most decks that run Emrakul are perfectly capable of hardcasting her if the game gets drawn out. Even if your opponent cheats Emrakul into play, Karakas is just delaying it a turn or two.
Someone mentioned Mangara of Corondor. Mangara + Karakas is a pretty good answer to Emrakul (of course, it's a pretty good answer to any creature that doesn't have protection from Mangara in some way).
Are we talking about the same Legacy format here? I don't think we're on the same page. The only time Emrakul in Legacy gets cast is through a Shelldock Isle, and that's still cheating the 15 mana casting cost. In Legacy, given the speed of the format, Karakas is typically a fine answer to Emrakul.
Hell, I don't think any decks other than Hive Mind run enough fetchable lands to hardcast Emrakul... and I doubt even most Hive Mind players have hard cast Emrakuls with their Grim Monoliths and Sol lands. Even if those decks did run enough fetchable lands, it would take an extremely long game to get that 15 lands out. And by then, time would already have been called. Closest I've seen my brother get with Hive Mind was 11 mana.

In Standard, playing UW Control, I doubt that's an issue unless your opponent somehow flips him off a Summoning Trap or resolves AND has mana for Quicksilver Amulet, which you shouldn't let happen.
DoJ is a colored spell. It doesn't destroy him. The only ways to get rid of him are with come into play effects or sacrifice.
... It doesn't target him. Protection is for targeted abilities and for him targeted spells. He can be wiped off the board with any and all board clearing effects like DoJ. He would have to be indestructible to avoid DoJ.
The ways I've most often dealt with Emrakul are Tumble Magnet to give me a few turns, Phyrexian Metamorph (any clone, but this is the one I run), and DoJ.
I run a deck where one win con is hardcasting emrakul. My opponent still beat me because he sacrificed 6 permanents, which were 3 creatures, 2 Oblivion rings, and 1 land. Then blocked with a Baneslayer angel and cast a Sun Titan next turn returning the Oblivion Ring to play targeting Emrakul. I was sad.
Block it with Marit Lage and swing for 20 on your next turn (I did this recently in a legacy tournament, after sacrificing 5 lands and a Dark Confidant).
Attack with a creature that has deathtouch and is equipped with Grappling Hook (requires surviving to your next turn).
Use Necrotic Sliver's activated ability (not sure if this requires Ghostflame Sliver to be in play; if activated abilities of permanents are not considered to be "coloured spells", then creatures like Avatar of Woe can also get the job done).

Vampire Nighthawk equipped with Viridian Longbow. Ping her for one point of lethal damage since Deathtouch (at least as far as I know) does not specifically apply to combat damage. If I am not mistaken you can even do this to kill her before having to sacrifice 6 permanents since everything resolves in reverse (though, admittedly I am not a "rules guru" so I may be incorrect on the second point).
Annihilator will be on the stack already and you have to sac nevertheless...that is if Emrakul is attacking already, but if you have the cards out, just ping at the end if the first main phase

I don't know much about 12-post, but it seems like the kind of deck that might play Emrakul.
Elves certainly has enough mana to cast an Emrakul, and It's perfectly viable for elves to run 1 in the 75 if you're expecting grindstone decks.
Enchantress doesn't see much play nowadays, but some versions of that play Emrakul, and play their own karakas to bounce it as a win con.
Gilded Drake is my favorite Legacy sideboard card against Emrakul. They'll think twice about ever casting Show & Tell versus you again. It turns what is generally thought of as a turn 3 win (resolving S&T) into instant scoopage or humiliation.

As for one I actually use in legacy, staff of domination stops emrakul pretty well
