Also, the reason for having the same creature type: Salamander exists as a MTG creature type. Axolotl doesn't. No need to invent it.

Axolotl/Salamander - This is a weird card. Pay mana for it to regenerate and grow bigger. When its power is 4, it becomes 6/6 and can regenerate for free but can't grow any more. Something simpler like Skeleton Scavengers might be better.
Gypsy Caterpillar/Moth - That is a lot of tokens, but I guess it is your opponent's fault if they are unable to stop it within five turns.
Two-Toed Sloth - It is a large wall. Should it maybe be:
"Whenever CARDNAME attacks or blocks, tap it and it doesn't untap during your next untap step."
Capybara - How about if it was 3/2 like Warthog? River Bear and more recently Zendikar Farguide suggest that a 3/3 landwalker should be at least four mana. If you want bigger, it could go 3/4 for 2GG like Heartwood Treefolk.
Arctic Fox - It works, but it must have a picture of a really cute Arctic Fox.
Dryad Sophisticate and Ayumi, the Last Visitor illustrate the general rule: a land subtype is written as a compound word, so gatewalk or locuswalk (or for that matter Urza'swalk) are possible, but supertypes are written as "supertype landwalk."
I like the way that Axolotl has to be traumatized in order to transform it.

Nope. Skeleton Scavengers. Activating a regeneration ability puts a regeneration shield on it. Your wording uses the old style of regeneration when you had to activate the regeneration ability as the creature was dying. Nowadays the way you worded it, you can just pay G to put a +1/+1 counter on it as many times as you want, whenever you want.
Instars are the name of the stages of molting a caterpillar goes through. Do a control-F for Instar on the wiki I linked. Granted, that number of counters make's 'em male, but heck, close enough.
I can go back and change the Axolotl. I initially did not have the +1/+1 counter clause. Changed that last minute before posting. Editing.
Coconut crabs can't swim and will drown if they try, but they need water to survive and can't breed outside of it. It could just as easily be GG and require islands.
I can make the Capybara 3/2, that's easy.
The token increase is huge, and they are an invasive species. If you let them invade, you gotta deal with the consequences game wise.

I like the concept of the crab, but it should be "If...", not "When..." to my knowledge.
I like the concept of the caterpillar too.

"If" is used for replacement effects. "When" is used for triggers. The crab has a state trigger so it uses "When" like Emperor Crocodile
