Whenever ~ becomes blocked, create an Aura enchantment with enchant player. It enters the battlefield attached to defending player. It has “At the beginning of enchanted player’s upkeep, he or she loses 1 life.”
This is one of those cases where the lack of precedent allows you to order the clauses however you wish. Your wording certainly works (although you need to specify that the Aura is a token).
Additionally, you can do any of the following:
1) "...an Aura enchantment token with enchant player attached to defending player. It has..."
2) "...an Aura enchantment token and attach it to defending player. It has enchant player and..."
3) "...an Aura enchantment token. Attach it to defending player. [It | The token] has enchant player and..."

Thanks! Another question: Can a player choose a null value for Temple Rogue (below)? In other words, if he controls no creatures, can he choose to sacrifice a creature anyways? My understanding is "no" and the player is forced to default to something he can actually do, but I'm not 💯.
Temple Rogue (Uncommon) 2B
Creature - Human Rogue
3/1
Worship (You may choose to have this creature enter the battlefield tapped and/or to not untap it.)
Whenever Temple Rogue worships, each player discards a card, sacrifices a creature, or exiles a card from his or her graveyard.

You are correct. A player can't choose to discard a card if they have no cards in hand, sacrifice a creature if they control no creatures, or exile a card from their graveyard if their graveyard has no cards in it. Doing any of these actions without their appropriate prerequisites is an impossible action.
608.2d. If an effect of a spell or ability offers any choices other than choices already made as part of casting the spell, activating the ability, or otherwise putting the spell or ability on the stack, the player announces these while applying the effect. The player can't choose an option that's illegal or impossible, with the exception that having a library with no cards in it doesn't make drawing a card an impossible action (see rule 120.3)...
Note that the ability will both trigger and resolve even if one or all players involved in the game fail to meet any of the requirements (that is, no players have a card in hand, a creature on the battlefield they control, or a card in their graveyard). The ability will simply resolve to no effect. This means that any mechanics you may have that care about "whenever a creature worships" abilities triggering or abilities resolving will still see this ability trigger and resolve.
