I've never been great with comp. rules, which typically keeps me from trying to do mechanics like this. But it's a perfect fit for my Villain Origins project so I'm hoping I can make it work. It isn't a particularly new concept:
Hunt (This creature can attack a creature an opponent controls.)
I expect it would work similarly to attacking a planeswalker. That is, creatures can block as they normally would, including a creature being attacked if it is untapped. If a creature with hunt was unblocked, it would deal its combat damage to the defending creature. The defending creature wouldn't deal any damage back (the hunted creature could still block and deal combat damage the normal way). I'm sure there's plenty of other details I haven't thought of, but I'd really appreciate any rules-writers that could help make this more ironclad.
This doesn't really work. You can't attack a creature directly the same way you can to a planeswalker. Trying to do so ends up needing a bunch of rules changes that aren't going to happen. You actually listed out some of the reasons why this isn't going to happen, not the least of which is that the hunted creature doesn't deal damage in your scenario. That is a fundamental change to how creatures work in combat.
The best you can probably do is some sort of fight mechanic forcing the creature to block when your creature attacks.
You could try this:
Hunt (When this creature attacks, untap target creature defending player controls. That creature blocks this creature if possible. Prevent all damage that crearue would deal to this creature),
Here's how I'd want it to work. Maybe this reminder text is better? It's much less succinct, but it more accurately describes how I envision the mechanic working.
Hunt (As this creature attacks, you may choose a creature defending player controls. If this creature would deal combat damage to a player this combat, you may redirect that damage to the chosen creature instead.)
That works too. I can't see any problems with that wording and it should work well enough within the rules. You should get rid of the word "redirect" as no other cards use it. Instead, try this:
Hunt (When this creature attacks, you may choose a creature defending player controls. If this creature would deal combat damage to a player this combat, you may deal that much damage to the chosen creature instead.)
It makes it a little longer but fits within current templating. Not to say you can't use redirect if you want
I've used a similar ability before, but without the second "you may". I think it is better/simpler if you just make the choice once as you attack. You shouldn't be able to change your mind after your opponent responds with a Withstand Death targeting the chosen creature.
Whenever this creature attacks, you may choose a creature defending player controls. All damage this creature would deal to that player this combat is dealt to that creature instead.
You can still not choose a creature and damage the opponent of course, but if you do choose a creature, then the damage will not be dealt to that player. CR should probably also specify that if the chosen creature leaves the battlefield before the combat damage step, the attacking creature can still damage any creatures that are blocking it, but will not damage the player.
