Is there any way to make this effect legal, or potentially less wordy?
"Whenever ~ fights another creature, it deals damage equal to its power to that creature first, then that creature deals damage equal to its power to ~."
Sadly I can't use the easy way out, Fall of the Hammer, as I need it to trigger 'When a creature you control fights' effects, but I still want a way to have a first strike effect in fights (as first strike doesn't do anything out of combat).
Even if damage is split up like this, state-based actions would still only be checked after the fight is complete. The difference between the abilities on Predatory Urge and Nightfall Predator only mater if the creature with the ability also has wither or infect, or if the targeted creature has an ability like Phantom Centaur
i.e.:
If you have a Predatory Urge on a Slinking Giant, when you use the Giant's ability, it deals its damage equal to its power first and puts -1/-1 counters on the targeted creature, then the targeted creature deals damage equal to its new lower power.
If you have a Blight Sickle on a Nightfall Predator, when you use the Werewolf's ability, it and the targeted creature both deal damage equal to their power at the same time, then the -1/-1 counters are put on the targeted creature.
I know, and other cards I have planned get around this, by saying if you would fight, instead do X, then fight. But replacement doesn't help me much unfortunately for this idea, I need a way for creatures to change the rules of fighting whenever they are a part of the fight.

Since you want to change the rules for fighting in the first place, here's something for you:
701.10e Some static abilities create continuous effects that modify how a creature fights. If such an effect instructs a creature to deal damage before another creature, the first creature deals damage equal to its power to the second creature, then the second creature deals damage equal to its power to the first creature. If such an effect instructs a creature to deal damage after another creature, the second creature deals damage equal to its power to the first creature, then the first creature deals damage equal to its power to the second creature. If both creatures are affected by the same effect, each creature deals damage equal to its power to the other creature simultaneously.

You would also need to put in something about checking state-based actions in the middle of the fight and stopping the fight if the second creature is killed by the first or the change is mostly meaningless.
I mean, if you don't mind getting kind of crazy with wording and want to keep the rules intact...:
If this creature would fight another creature, instead this creature deals damage equal to its power to that creature, then, if that creature hasn't been dealt lethal damage, it deals damage equal to its power to this creature.

Suppose creature A and creature B both have this ability. Creature A and creature B fight. Because creature A's replacement effect affects creature A, and creature B's replacement effect affects creature B, this isn't a case of the affected creature's controller choosing which one to apply, so there is no APNAP order of choosing which replacement effect applies to which creature. In other words, both apply at the same time. As a result, both creature A and creature B will deal their damage first, and then whichever creatures haven't been dealt lethal damage yet will deal damage to the other again.
