If you don't mind the fights being sequential, you could probably use:
Target creature you control fights target creature you don't control. Then another target creature you control fights another target creature you don't control.

I think you can just smoosh it into one sentence to make the two fights happen at the same time.
Target creature you control fights target creature you don't control and another target creature you control fights another target creature you don't control.
