Although the rules text refer to the creature riding being the "creature mounted on a <creature type>" and that the creature being ridden on is the "mounted <creature type", the fundamental relationship between the two objects are that they are still "attached". (That's what the your incarnation of mount does: it attaches the creature that has the ability onto another creature.) As a result, it will still be affected by 704.5q and both literally and flavorfully fall off.
3) Let's say I have a Cavalry Captain and I target a Horse creature token. Later in time, the Horse creature token ceases to be a Horse (be it that it turns into a noncreature permanent or it just loses that creature type). What happens to the Captain?
4) It would be more flavorful for the mounted and the mountee to have to attack the same thing. It doesn't make sense, for example, for my Cavalry Captain to be attacking Player B whereas my Horse is attacking Player C.
5) If, for some reason, a mounted creature gains a mount ability, that creature would be able to mount on another creature. For example, if Cavalry Captain is mounted on a Horse creature token, and the Horse creature token gains "mount Hydra", and the Horse mounts the Hydra, the Captain would be mounting on the Horse which is now mounting on the Hydra.

There's nothing that can be done about point 1, though, since a fix for that ruins the entire point of the mechanic.
Despite the awkward rules interactions, I always like seeing peoples' imaginings of a mount mechanic.

Well, point one can be addressed by making sure the mount-able creatures are staple in the decks you play the mounting creatures even without playing the mounting creatures. For example, AFAIK Hydras are pretty much guaranteed in a mono-green deck (correct me if I'm wrong).

Oops, ninja'd. Eh, the idea was that it's the mountee that's trained to ride the mount. Not the other way around. I mean, not everyone can ride a horse, but pretty much every horse can be ridden by a well trained rider.
I just dont see the idea of "Mount <creature type>" working the way you are trying to make it work. And historically speaking, most cards that have been mounted, usually dont have a mechanic or ability referencing their mounts.
Maybe a mechanic similar to a combination of Living Weapon and Monstrous in a few ways could work then. Borrowing from the living weapon/monstrous combo, you could go with something similar to this route for the example creatures you gave:

Mount (Whenever ! enters the battlefield, put a colorless 0/1 Horse creature token onto the battlefield attached to ~. As long as it remains attached, ! is considered Mounted)

I only see one issue with this mechanic, that being the possible confusion as to whether the Mount itself can attack as well as its "rider". Maybe tack on a line to the "Mount" ability that prevents the 0/1 Mount from being able to attack, since usually after a rider is killed, the mount runs off and doesnt pick up his sword and charges into the enemy.
PS - Assuming you dont use this version, could i take it for my own Custom set im creating? Ive been looking for a mechanic to use for one of my "tribes" and this fits them perfectly.

If an organic horse is being ridden on by a human, how does that suddenly make the organic horse susceptible to things that destroy nonorganic, metal-based things (artifacts) or weird, magic-based things (enchantments)? It's still an organic, nonmetal, non-magic-based horse even if it's being mounted by a human.

I never said the "mount" becomes an artifact, it just loses its creature status, and becomes equipment. For non artifact Mounts, it would work the same way, I see nothing wrong with a generic run of the mill horse becoming "Equipment" in the scope of the rules of Magic, especially after Bestow.

When mounted, this would have the Equipment type, as well as the Horse type. Would take a little bit of finnagling to figure out exactly what it is since as worded, it is a ????? - Horse Equipment by the rules of magic as they are now, but the Horse is immune to artifact destruction as written now.
Oops, I forgot to mention that Equipment is an artifact subtype. This means that an object can be an Equipment only if it's also an artifact.
I guess the rules and flavor could be changed so that the rules supported nonartifact Equipment objects and so that not all Equipment are perceived to be pieces of metal that humans hold in their hands.

The main reason that I went with the "intelligent" counterpart being attached to the "unintelligent" counterpart rather than the other way around was so that I could have things like Sylvan Hydramaster, where it gives more of a feel of the rider controlling the mount.
Honestly I thought this is what Soulbound was going to be used for, primarily, so I would be happy with something like Soulbound only on mountable creatures. That said why not do it like Bestow? That gets rid of the 'this is an artifact' part too.
