Following the [new 'Star Wars' film] targeted for release in 2015, the company said "more feature films [are] expected to continue the 'Star Wars' saga and grow the franchise well into the future."
As much as I'd like to see a 7th, 8th & 9th film set after the events of ROTJ (if that's the route they are going), I think there might be more cons than pros:
Cons:
- Dilution of the franchise; the Skywalker family story is pretty much complete; anything further seems like it would dilute the already great storyline ("great" being an opinion) and frankly, a bit of a cash grab. There's alot to be said of the phrase "less is more" and I believe that applies here. I would love to see certain things on the big screen, but I think the core fanbase (fanboys primarily) are just as happy learning about the future of a galaxy, far, far away in the books;
- I'm not sure I'm in favor of Disney being in charge. Now, I know they've produced "adult" movies but we certainly don't need more Ewoks or Jar Jars or kid-friendly characters to appease children. You can make a good Star Wars film w/o silly comic relief and yes, perhaps that was more Lucas than anything, but Disney may be more prone to adding these elements rather than deeper plot-lines;
- Disney is becoming a little too big, IMO. They bought the Marvel Entertainment, Pixar Studios and now Lucasfilm - almost like a monopoly on the entertainment business and monopolies = less creativeness, IMO. There's already a thread in here discussing originality in Hollywood - this would not contribute to future originality.
- Actors; if the plan is to do a 7th, 8th and 9th film and a continuation of the Skywalker family, then I think to do it effectively you need the original actors and frankly, after seeing what some of the actors have done since the original trilogy, I don't think it would be acted any better than the prequel trilogy, and that's not saying much. And that includes Harrison Ford, IMO.
- Along the first con listed above, the last three films frankly weren't as good as the originals and were not as well received from fanboys or casual fans. Did they make a ton of money? Yes. Are they as iconic or as beloved and contain the elements that the original prequel trilogy? I would argue, no, and I believe making another 3 films under the direction of a new director would just further degrade the original trilogy. Now, Hollywood had done some great "reboots" of franchises lately - Batman & Star Trek to name a few, but those films had great casts and great direction whereas Star Wars will no doubt have great special effects, but I have my doubts on the cast and direction.
- No more Darth Vader (at least not outside of his ghost form which turned back to the "light" side of the force); perhaps the greatest villain in cinematic history will probably not be present.
Pros:
- Obviously millions of people love Star Wars and it would be cool to see a 7th film on the big screen in IMAX (if they go that route). As much as books let the reader use their own imagination, there's always something special about seeing something with your own eyes on the big screen.
- As Blinking Spirit mentioned, perhaps w/o Lucas behind the wheel of the franchise, the acting and overall quality of the film might improve (although I have my doubts).
- This is a personal pro just because I have a family, but by the time these come around to theaters, my kids will probably be old enough to see them and I'd love to take and watch new Star Wars films with my children.
There are probably more Pros and Cons I'm leaving off my list, but after my initial thoughts, I'm not sure I'm in favor of making future films. I should also disclose that I'm more of a pessimist than an optimist so I always think of the negative things first in almost anything which may contribute to my line of thinking.

I think all relevant points have been brought up. I might add that Disney is a juggernaut of a company and no one knows better how to keep a brand successful. Heck, Pixar is one of the greatest things to ever happen to film imo and that turned out ok.

For all his faults, Lucas is a hell of an idea man. The title "Creative Consultant" could mean anything, but a best case scenario, of him tossing out ideas while other writers and directors filter all but the best ones, this could be a hell of a project.

Not to mention Hollywood's love of repeating themselves mean the easier, more hackneyed the idea, the more lucrative.
Incidentally, Wikipedia tells me that historically, "creative consultant" is what producers would call you if you re-wrote part of the script, but didn't create the idea / first draft. Now there's the dream job. Someone does all the structure, the characters, the story, all you need to do is make the dialogue sound snappy.
I detest the star wars extended universe and would sooner see the entire thing chucked into the fanfiction bin. Unless Disney also buys out Dark Horse, they _will_ be making their own continuity rather than relying on the one laid out in the comics and books.
EDIT: Oh, and can you imagine Star Wars rides at Disney World? That'd be awesome.
Already done. Both the original and current revamp are high quality rides. The revamp is especially entertaining since the branching paths mean the ride is almost always different. It would be cool to see some other Star Wars based rides, though.
Of course now that Disney owns both Marvel and Star Wars I'm waiting for some confirmation that Tony Stark is Boba Fett's ancestor.

I for one find this quite encouraging. Disney Subsidiaries (Marvel, Pixar) have made a sizable portion of the good movies that have come out in the last several years. The Marvel movies are extraordinary. A new Star Wars that Lucas can't screw up is wonderful.
Disney is EXCEPTIONALLY good at listening to customers. They have a customer service model which serves as the basis of many many business courses on how to be successful at dealing with your target clientele.
I am pretty sure the next Trilogy will be exceptionally good. Disney companies really don't produce much crap.

No, the truth is the parts of Disney that work are the ones that have the most competent people heading them up. Marvel is doing fine because the people that were producing their films before the merge are still involved in the franchises or set them up before Disney bought them. Pixar is doing well because the people that made it great from the start are still there!
At this point, we have a coin's toss chance of them making something terrible or something tolerable.

Disney may make a ton of drivel, but I have no doubt they do so by targeting an audience and knowing they'll profit well from it. Salvationers may hate Hannah Montana, but it also isn't targeted at our demographic. Same goes for direct-to-video "Little Mermaid II" movies. In other words, these are intentional (and frankly smart) decisions for a company to make, and the strategy employed targeting one demographic isn't necessarily representative of how they will approach a franchise targeting an altogether different demographic.
I think Disney knows how rabid the Star Wars fanbase is, and how much is riding on them making it right...or at least tolerable. And, after the debacle that was Ep 1-3, I'd be very happy with tolerable. Here's hoping Star Wars is put into capable hands.
