There is no printed card that is modal and included coin flipping. I made one that has 3 modes, but the winner of the coin flip gets to choose the mode.
You need to post the exact text for others to give opinions. I can tell you coin flips don't have a "winner and a loser"; the flipping player simply gets one of two results, be that win/loss or heads/tails.
You would have to hard-wire in coin flip rules before modes are chosen for spells. It's clunky enough to not really be worth it in the end. Why can't the player whose result was called just choose the mode upon the resolution of the spell? Why is the timing involved that important?

Flip a coin. Whoever wins the flip chooses one:
1
2
3
As already mentioned, players don't win or lose coin flips. Rather, the result either matches or doesn't match what the flipper of the coin called, or the result is either heads or tails.
Using your current template either:
1) ...requires that the coin flip be performed before modes are chosen as part of the process of casting a spell, in which case the modes can be targeted; or
2) ...requires that the coin flip be performed during the resolution of the spell, in which case it's no longer even a modal spell by definition.
As I mentioned, (1) is extremely clunky to implement, and (2) is by definition not what you want.

This isn't right. I'm not sure if it has ever been right because a quick look at cards has this not being the case for at least 10 years and I'm not familiar with the rules from before then.
705.1. To flip a coin for an object that cares whether a player wins or loses the flip, the affected player
flips the coin and calls “heads” or “tails.” If the call matches the result, that player wins the flip.
Otherwise, the player loses the flip. Only the player who flips the coin wins or loses the flip; no
other players are involved.

Bolding the part that's important here. If you win a coin flip, that doesn't mean any of your opponents lost that flip because they didn't flip the coin, and vice versa.

Yes, which is why when I responded to the OP I told them this and gave them correct wording.
Flip a coin. If you win the coin flip choose one. If you lose the coin flip choose an opponent, he or she chooses one.
This doesn't change your statement from incorrect to correct.
As already mentioned, players don't win or lose coin flips
Players quite obviously lose or win coin flips. Its in the rules, more than half the cards that care about coin flipping care about winning or losing. Yes only one player is involved so if your stance was specifically that playerS don't win coin flips then that would be correct. But I doubt that is the your stance because of your follow up.
Does it work?

It should work but none of the option can be targeted, which isn't really a problem just something you need to be aware of.
