Copy Spell needs a name change more than anything else but also, I don't enjoy it much overall. The can't be countered part is a neat effect for sure and it belongs on cards sometimes but here I feel that it's not entirely needed even though it seems to be a main feature of the card.

Chalice of the Heart This is my favorite card of this group. I'm going to test this in Commander right away
Underworld Rider I like everything except for the ETB. It's WB yes, but it doesn't feel right to me here.
Copy spell "can't be countered" is of limited use, since the original can be countered (countering copy spell). It's only useful if an opponent is casting a spell, you copy it, and the opponent doesn't want to counter his original spell. I guess you can copy uncounterable spells, but that's also quite rare.
Chalice of the heart -- the more mana you spend on it, the less likely you'll gain life (because most decks concentrate on lower CCs). I'd suggest changing this to gaining life when casting cost X and lower, rather than just x (so that if x=5, then you still gain life from a 4cc spell), or gain x life (so that if x=5, you don't gain life from a 4cc spell, but gain 5 life from a 5cc one).

Countering the original spell does not counter Copy Spell. The target spell is still a valid object that can be copied, countering that spell does not prevent this. Additionally, this could be used in response to a counterspell to make an uncounterable copy of the spell being countered, allowing it to function as a counter-counterspell.
Copy Spell needs a name change, and at 3cmc is honestly quite narrow. 2cmc variants are good for comboing with your own spells, so this is going to be relegated to copying opponent's spells much of the time I feel.
Pikachu used Quick Attack, it was super effective.
Mondu is right about the Chalice, but I think that's a feature rather than a problem. Low cmc spells are cast more frequently, but give lesser returns, higher cmc spells are cast sparingly, but give proportionally larger returns. It encourages a strange deckbuilding plan too. I approve.
Underworld Rider feels pasted together. As in it feels like you took a white effect and a black effect and just glued them together on a card. The card works just fine, it just lacks that inspired spark.

Countering the spell you are targeting with Copy Spell will remove the target from the stack so it will have an illegal target and Fizzle.
That's what I get for not reading the comprehensive rules in full. I always thought that countered spells remained on the stack, until their turn to resolve came up, then were removed.

That's because you're reading the edited version. IIRC, the original version gave you 1 life per spell, rather than 1 life per counter. At 5 counters, it would have given 1 per 5cc spell cast.
