Came up with these while trying to think of evergreen combat keywords for these colors. Yes, they're both evasion abilities, and yes Sneaky Fighter has issues in multiplayer. That's why I don't think these are very good choices for evergreen status, but I think they make for interesting one-off designs.
I can definitely see Sneaky Fighter printed in an official set. I like Tricky Fighter, I don't know if it's too difficult in practise. Btw, I think its wording would be : ~ can't be blocked by creatures without haste that are not controlled (by a player) since your last end step..
I think the wording you're going for is more like "...creatures without haste whose controller gained control of them since your last end step," but this is starting to get confusing. I think I'm okay letting Mind Control effects slip through for simplicity's sake.
I find tricky fighter very difficult to parse. I don't have a good fix to the template though. The fundamental problem is that its basically unblockable with two nested exceptions. Assuming I'm even understanding it correctly. How about the following instead?

Creature - Human Rogue
Creatures without haste entering the battlefield under your opponents control enter the battlefield tapped.

Every time I read a comment about "Well if this card had card draw/trample/haste/indestructible/hexproof/life gain...", I think "You're missing the point." They're armchair developer comments that fail to take into account the card's role in the greater Limited and Standard environment. No, it may not be as good as whatever card you're comparing it to. There's a reason for that. Not every burn spell is Lightning Bolt, nor does it need to be or should be.

Your first suggestion is more powerful than I want, as it gives all of your creatures the same evasion ability.
Your second one could work, although I keep wanting more and more to just flat out say "~ can't be blocked by creatures that are affected by summoning sickness."
