I know this ability works fine in black, but I think its 'delayed' condition and synergy with saboteuring and need for a blue combat keyword, could be justified as UB, particularly given black is the only color that really deals with "loss of life" vs red "damage" and perhaps blue could bleed into "loss of life" effects more.

A delayed trigger doesn't make life loss suddenly mono blue... bleeds like this only work in a set that is black focused/centered. Even then it's kind frowned on.

Well if only then because it is tied to creatures, since creatures inherently cause loss of life through combat, because I feel like this mechanic is worth exploration yet would be a shame to restrict to a single color and I think Blue is the best secondary color for the effect, if not then Red.

Red already has double strike, as does white. Blue shouldn't have either double strike, or this mechanic, except in rare exceptional cases.
Blue should only get double strike by copying it. And I agree that this effect does not feel blue. If anything, it's another black/red effect.

Every time I read a comment about "Well if this card had card draw/trample/haste/indestructible/hexproof/life gain...", I think "You're missing the point." They're armchair developer comments that fail to take into account the card's role in the greater Limited and Standard environment. No, it may not be as good as whatever card you're comparing it to. There's a reason for that. Not every burn spell is Lightning Bolt, nor does it need to be or should be.

But Mirror Mockery did not make a token that was attacking. It was specifically for defensive purposes or abusing ETB effects by itself. You need other cards to combine with it if you want to do something other than that (like Sundial of the Infinite). This mechanic (temporary offensive tokens) is a more of a redmechanic.

Your first design doesn't do anything without support cards that care about creatures that enter the battlefield.
Your second design specifically appears in Naya colors; UB can't do it without support from those colors. Notably no monoblack or -blue cards make tokens or cheat out creatures that ETB tapped and attacking at all except ones that have support from red, white, or both. Mardu Strike Leader is the closest they get to that effect.
As for the multicolored cases, Geist of Saint Traft then can be read as needing blue for the hexproof component and white for the Angel buddy component (appropriately), and Yore-Tiller Nephilim is a Kaalia of the Vast which trades in tribal for graveyard; they both have red and white components.
I'd say, in conclusion, that buddy attackers are a Boros thing with a special bleed into green permitted only for 'pack of wolves' effects à la Nacatl War-Pride and the Cagebreakers as above.
I think a delayed combat damage is what you're looking for. something like:
