What do you guys think of them in EDH? Are they worth inclusion as evasive beaters? I have especially high hopes for the Inkwell Leviathan in my Zedruu deck, which is rife with ways to give others Islands.
I think the best about the Stormtide Leviathan is its capacity to shut down tokens and other nonflying creatures decks. Even so, Its can be even better against a green deck, because they don't have almost any fliers but a few islandwalking creatures, but any island/blue-hate they could try, will backfire to them.

Stormtide Leviathan is rather powerful, because it does a lot:
1) It's an 8/8 unblockable
2) It fixes all of your blue mana
3) It stops a large portion of creatures from being able to attack.
Basically, it can remove both attacking and blocking from the equation for your opponents while providing a decent clock itself. And the manafixing ain't bad either. There's also tricks you can do like Boil, Carpet of Flowers, or Choke to turn that ability to your advantage.
Inkwell is less exciting. It's pretty big, has shroud, and has two forms of evasion, but that doesn't really cut the mustard in EDH in a lot of cases. It's not the worst option for a big dude, but it's probably one of the first things I'd cut in a deck that wasn't aimed at winning via a couple of big creatures (i.e. Combo, Voltron, etc).

Inkwell is less exciting. It's pretty big, has shroud, and has two forms of evasion, but that doesn't really cut the mustard in EDH in a lot of cases. It's not the worst option for a big dude, but it's probably one of the first things I'd cut in a deck that wasn't aimed at winning via a couple of big creatures (i.e. Combo, Voltron, etc).
I've seen 7-11 run in a sharuum edh with Master transmuter. It may be a big dumb beater, but it does at least have evasion in the form of shroud.
If you run Stormtide and you want another beater, I say go for it. better cards, but nothings more fun then a convienience store butt whuppin'
I feel like I should be running Stormtide Leviathan more than I should in my blue decks. Some decks like tokens and non-flying Voltron generals just get stopped cold by this guy while they scramble to find an answer. He's a fantastic counter to Eldrazi, Team Best Friends, Sun Titan (and all other titans), and many other creatures that rely on getting through the red zone to do their damage. Just make sure Akroma's Memorial stays off the board.
Just remember there's a huge difference between creatures can't attack, and creatures can't attack YOU. I wouldn't cast the leviathan unless you are prepared to really shake up the board and everybody's threat assessment.

Especially if you can cheat it into play or reduce its casting cost, Inkwell is SO difficult to remove. You don't always have a sweeper in 1-on-1, so have fun dealing with one of those.
In multiplayer you face more wraths, but the trample and islandwalk means some damage is getting through whenever they attack.

Also, I love the recommendation of boil, especially if you have a way to make your lands indestructible. Might be a good thing to run in URW?
