Probably Juggernaut out of those two, and Gargoyle over Outlaw. 4/4 flyers are always a house in Limited, especially when they're only killable when in the air.

This. Having a colourless first pick is huge in this format.
Both permanents that win you the game once you sink a ton of mana into them. Test subject has lower initial investment, can save you some life early, and kills faster if unmolested.
Punishment has about two answers in the whole set and is a better splash (test subject loses the speed advantage if splashed). I go with the punishment.
I would take Heretic's Punishment and I think it's a much better choice. It's way to easy for people to deal with Ludevic's Test Subject and it's much heavier blue than Heretic's Punishment is red (you really want to be able to EOT put two counters and put three counters during your turn when you play it, meaning you want to have 3UUU)
It is powerful and potentially game-ending. There's no doubt about that. However, you have to be extremely careful when playing it. It's a lot harder to pull off than one would think.
First of all, it is fragile. As a non-human/werewolf/vampire/zombie creature, the list of removal spells that can deal with it is longer most creatures. It has low enough toughness that it can be easily killed by Brimstone Volley, Prey Upon, Corpse Lunge, Harvest Pyre, but it can also be dealt with by Smite the Monstrous. The same can more-or-less be said about pretty much any creature though, right?
However, the worst part about it is that it can be dealt with AFTER you've committed spending time/mana into hatching it. Imagine getting it up to four or five counters and having it removed. It can also be bounced just prior to or after its transformation, putting you in a very awkward position. A wise opponent will allow for you to commit time and mana into him before he removes him. Here's a real-life situation I've been in, during a FNM draft.
-My opponent had four land in play and cast Ludevic's Test Subject. At the end of my following turn, he gave it a counter.
-I had Claustrophobia in my hand. However, I didn't intend on casting it just yet. I played another creature.
-On his next turn, he played his fifth land and passed his turn.
-I anticipated he was going to add two counters on my end step, and then the final two counters on his own turn to swing at me for 13.
-Instead of removing it then and there, I spent my mana on getting another big creature on the board.
-Sure enough, he flipped and hit me for 13.
-On my next turn, I casted Claustrophobia and swung with everything. Sure, I was at 7 life, but my lead in board position was insurmountable at that time. I took 13 damage but I dealt 20.
-He said I was lucky I drew Claustrophobia. I smiled and said "good game".
Essentially, while this card can end the game very quickly if the opponent has nothing to deal with it, it can also serve as a double Time Walk in his favor if he DOES have something to deal with it. So, at first glance it is seemingly no more fragile than an Olivia Voldaren or Bloodline Keeper. However, unlike other bomb creatures that can die, losing your Ludevic's Test Subject result in very grave consequences.
This leaves you with but one safe option: Spending mana on it ONLY if you have nothing else that's worth spending your mana on, or if flipping it is your ONLY chance at victory. This slows the impact of Ludevic's Test Subject considerably. It has the ability to break stalemates, but it can't really help you win a game from behind. It's still card you'd want in your deck, but it's nowhere near the same level as real bombs that will always improve your chances to win no matter what... such as Heretic's Punishment.
P1P1. I'm thinking it's never olivia since you're going to get cut black and red on P2 always. So.. bloodline keeper? And what would you do if you were the person to the left seeing the guy pick bloodline keeper. Would you still take olivia? or the fireball.
Is this a real pack? To me those are the 3 top picks in Innistrad Limited. I would take the Olivia Voldaren because I think it is ever so slightly more powerful than the others. It has more potential.
Then I would agonize over the 2 cards that I passed, especially since I haven't had a chance to have any of these in Sealed pools or in my Booster packs.
Daybreak Ranger vs. Angelic Overseer. Obviously Angelic Overseer will see play easier, as it only needs White and a Human. I think Daybreak Ranger is more powerful though if you can get a GR deck. So it just depends on whether you want to force GR or just be complacent with White. I would probably take Daybreak Ranger.

I would say Moan the Unhallowed. As much as I personally really like Dead Weight (probably picked an average of 1 per Limited deck counting when I didn't even go Black), I think Moan is more powerful. It puts a lot of dudes on board w/ the threat of more dudes later.

I'd take the mini wrath. Card advantage and comeback mechanic...with flashback.
Only problem is you're sending a strong suggestion for someone to your left to play white, which is the color you just picked.
