Let's say I have exquisite blood and and archangel of thune on the battlefield and i attack with two 1/1 unblockables. Now whenever exquisite blood triggers so would archangel of thune so my question is, is combat damage from two creatures two instances of your opponent losing life or just one. Would i be putting 1 or 2 +1/+1 counters on creatures I control.

Simultaneous combat damage from multiple creatures is one damage event and results in one event of the defending player losing that much life. Exquisite Blood triggers only once, so Archangel of Thune will trigger only once.

I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.
But let's say both of the creatures attacking had lifelink. Even though combat damage is simultaneous it is still considered 2 instances of life gaining. Could you show me a ruling explaining the difference between these 2 circumstances?

603.2c An ability triggers only once each time its trigger event occurs. However, it can trigger repeatedly if one event contains multiple occurrences.
