I don't think you can get additional ditto's that way, not even with the oval charm (which is available, you just need to complete the Kalos dex for all regions). I would love to be proven wrong on this one though.
I don't think he was talking about breeding more dittos. Breeding pokemon of different species has a lower chance of generating an egg than same species, and breeding two pokemon from different trainers also increases the chance of yielding an egg. Basically, You get like an extra 15% chance of an egg if the two 'mons you're breeding didn't both originally belong to you. Doubling the chance of getting a shiny is also a bonus.
Basically, having a perfect ditto that you yourself did not catch makes breeding perfect 'mons faster than if you were using one you caught yourself. Of course, I'd assume a 5-6 iv ditto would be incredibly valuable since they can't be bred. The safari gives you at least 2 ivs' but the rest is RNG. So, 1/31^(3 or 4)
chance of any ditto you catch meeting those requirements. If you want one of a particular personality for even more ease of breeding, double the denominator (assuming you have a synchronize 'mon with the correct personality, otherwise multiply by 16)

I caught a shiny Geodude in a hoard while EV training. Oh man, it was a pretty white-knuckle experience. They were all Magnituding each other and I was all like, "oh man, they're gonna kill each other but I can only kill one at a time!" So in the midst of all the Magnitudes I killed them one at a time til the last one left was the shiny one. And he's awesome cause he's gold :3

You want white-knuckle experience? Try finding a shiny Graveler and simply knowing it has Explode.... and then needing a few turns to whittle it down since False Swipe can only do so much damage versus rocks....

So, lets say i dont have Pokerus. Fainting the Horde should give 25 EV , correct? I am asking, because no matter what i try, i do not get more than 5 EV per Battle (Yes, i am using the correct items on the correct Hordes). Is there something i am missing for EV Training without Pokerus?
Scarf Hydreigon is great as well for checking various threats, playing very well with Angislash (it resists all of Angi's weaknesses and vise-versa), and can clean up with Dark Pulse.
Another use for Choice Scarf: put in on a HA ditto and you have an excellent revenge killer.

1. Yes stealth rocks is an egg move if you have it on him. You can try egg groups but i am not sure if that will lead to it.

3. Yes you should be getting 25 each, i do not use pokerus and thats how i do it and each time i get 25. Here is a rough breakdown
To begin this method, take the pokemon you plan to train and infect it with pokerus. The pokerus will double the effort value yeild when an opposing pokemon is knocked out. (For example, a pokemon gives 1 Speed EV; pokerus will double it to 2.).
Equip the power item for the stat you wish to train, (Weight = HP, Bracer = Attack, Belt = Defense, Lens = Special Attack, Band = Special Defense, and Anklet = Speed.). This will further your effort value yeild an additional four points. (Base 1 Speed EV + Anklet = 5 Speed EVS. With Pokerus = 10.).
Now using a pokemon with Sweet Scent, or the item Honey, you hunt for the Horde Encounter in the chosen area.
Once it is found, you kill them off with a multi-hit move like Surf or Earthquake. This will give you 50-60 EV's in the chosen stat. (Base 1 Speed EV + 4 Speed (Anklet) x 2 = 10 Speed EV's) x 5 Pokemon in a horde encounter = 50 Speed EV's.
Someone here needs to beat me. I'm starting to get a little cocky

Oh Gamefreak, why can't you create a decent post-game where I can simply level my pokes to 100. You did such a good job with B2&W2 what with that personal shopping mall and the battle tower/tree thing, why isn't this included in X&Y?
- I hate to grind elite 4s, but this gen it is even worse since they don't get upgraded after you first beat them... just the same old four pokes.
- I'm sick and tired of that annoying restaurant where I need to win in a set number of turns. Just let me beat the crap out of those guys
- A once per day battle versus your rival... Why I don't even.....
Out of sheer annoyance I just started to build a pickup team so that I may grind for rare candies.... but of course levelling them all to at least 90 takes a century even with lucky eggs and traded pokes.
Just try the Battle Chateau. After reaching the highest rank you can send different Writs of Challange. With a Black Writ of Challenge the level or the other Trainers Pokemon is raised by 20 (and you earn more money per fight).
You will find Gym Leaders here as well as the elite four and the league champion. All of them got Pokemon around 60 and if you reach at least the rank of Duke and are champion the level will rise to 70 or even 80.
Also you find a few trainers with Audinos only which grand around 5k XP each.
