I know that if I cast say Doom Blade on a creature the card being bestowed then comes in as a creature and there is no 2 for 1 interaction...
However...
Player a. casts Boon Satyr on Scavenging Ooze. In response I Doom Blade the Scavenging Ooze. After that resolves can I then essence scatter the Boon Satyr, or is it still not resolving as a creature spell? Assuming based on 608.2b that it would check for the original target and upon not seeing it resolve as a creature.
Looking for Judge or RA input, not speculation. Thanks.
It will continue to be an aura spell on the stack. As it is resolving it will see that it isn't attached to a creature, and will enter the battlefield as a creature. There's no point in time where you can use an Essence Scatter if it was originally cast with Bestow.
Boon Satyr cast for its bestow cost can't be countered by Essence Scatter even if its target has become illegal because the rule causing the type-changing effect to end doesn't do so until the Satyr begins to resolve (at which point it's too late to cast Essence Scatter).

702.102d As an Aura spell with bestow begins resolving, if its target is illegal, the effect making it an Aura spell ends. It continues resolving as a creature spell and will be put onto the battlefield under the control of the spell's controller. This is an exception to rule 608.3a.
Incidentally, you shouldn't request specific levels of certification or imply that other answers are "speculation" since rules knowledge isn't limited to those who are certified (and you can't really verify it anyway).

Incidentally, I can request specific levels of certification any time I want, and you can very easily verify L2+ judges.

Referencing: If the target creature leaves the battlefield after you cast a card with bestow as an Aura but before the spell resolves, the Aura spell will resolve as an enchantment creature rather than being countered like a normal Aura spell.
This neither states that it resolves as or not. I could understand if it says at this point it resolves as a x, but it says WILL resolve. Know what I mean?

It says right there in rule 702.102d. As the spell is resolving.... You can remove the target of the Bestow Aura spell, but that Aura spell will continue to be an aura spell up until the game checks to see if its target is legal. There are only two points in casting a spell that targets are checked: When it is cast, and when it resolves. In this case, when the Aura tries to resolve as an Aura spell, it sees an illegal target then resolves as a creature instead.

At the point that the Aura spell starts to resolve and becomes a creature, you will not have priority, and you won't be able to cast any spell (no one has priority while a spell or ability is resolving). After it resolves, it is no longer a legal target because it is no longer a spell at all.

The part of the Bestow ability that makes the Aura spell resolve as a creature doesn't make that change until it starts to resolve, at the same time that it checks to see if the spell has a legal target (ie when it resolves). At that point, you won't have the ability to try and cast the Essence Scatter (because it will no longer be a spell) and before that, it will still be an Aura spell (just one with an illegal target).
So it's a bestow specific thing it seems? WotC wording awkwardly since forever.
If you cast a bestow card for its bestow cost, it's never a creature spell. Instead, it's an Aura spell with enchant creature, so you have to target a creature to cast it. If that creature has a heroic ability, this will trigger it, just as any other Aura spell would.

Well, you can verify that a person by the name of Carsten Haese is currently a level 2 judge, but you can't prove that the person who's typing this post is that Carsten Haese, or any Carsten Haese for that matter.
The bottom-line is that demanding answers in this forum from people with specific qualifications is rude and pointless.
